Malaika Arora recently ventured into the restaurant business with her first establishment Scarlett House in Mumbai. One of the main attractions on the menu is her favorite paneer thecha, a dish inspired by the rich flavors of traditional Maharashtrian cuisine.

In a conversation with Curly Tales, Malaika Arora shared her personal recipe for Paneer Techa, a dish she considers a staple in her home. She described it as a comforting favorite that she likes to make regularly. Let’s take a closer look at the recipe. Malaika Arora’s special techa recipe

Ingredients:

6 to 7 green chilies

10-15 cloves of garlic

Coarse salt (to taste)

1/4 cup peanuts

Fresh cilantro and coriander stalks (large quantity)

Juice of 1/2 lime

200 g paneer

A little oil (for cooking paneer)

method:

1. Heat a pan over medium heat and fry the green chilies, garlic cloves and peanuts. Keep stirring to prevent burning and fry them until they are lightly charred and fragrant.

2. While the chilli and garlic are roasting, coarsely chop the fresh coriander and coriander stalks. Set aside.

3. When the chili pepper, garlic and peanuts are fried, let them cool down a little. Then grind them together in a mortar or food processor to a coarse paste. Add coarse salt to taste and lime juice for zest.

4. In another pan, heat some oil and fry the paneer cubes until golden and crispy on the outside.

5. Add the prepared thecha (paste) to the cooked paneer. Mix them gently so that the paneer is coated with the spicy aromatic mixture.

6. Sprinkle the dish with freshly chopped cilantro and coriander stalks. Give it a final toss and serve hot.
